His & Hers Cocktails - Bitter French & Campari Mimosa

And just like that, another year has come to an end and a new one is about to start.  As that clock slowly rounds to midnight, I know many people have New Years Resolutions on their mind.  I applaud every single one of you and I wish you the best on your journey.

I on the other hand, instead of resolutions, I'm thinking about how I'm going to finish up that bottle of champagne as not to waste it.  Now the wife and I will not finish the bottle by ourselves tonight.  I could just serve it, plain, during tomorrow's brunch.  But even with a bouchon (a metal type cork that extends the life of your bubbly), I find that champagne will slowly lose its essence overnight.  I could invest in the Chamagne Coravin system (their Coravin for wine is wonderful, especially if you have vintage bottles).  But it's new to the market, hard to come by and little too expensive and Amazon will not deliver it by the morning.  That brings me to today's champagne cocktails.  If you're having a New Year's Eve party, these champagne cocktails are a great way to stretch your budget (and bottle) when serving a crowd.  If it's just you or you and your partner, then sip your glass of champagne tonight and use the rest of the bottle to make these libations for your New Year's Day brunch.

His Cocktail - Campari Mimosa
1 oz Campari
2 oz fresh orange juice
Champagne

Add the Campari and oj to a champagne flute or coupe.  Top with champagne.

Her Cocktail - Bitter French
1 oz gin
1/4 oz Campari
1/2 oz fresh lemon juice
1/2 oz simple syrup (we used 1/4 oz)
Grapefruit twist
Champagne

In a cocktail shaker filled with ice add the first four ingredients.  Shake until chilled.  Strain into a flute or coupe glass and top with champagne.  Squeeze the grapefruit twist over the cocktail then discard.
